Hi Ted!
I used to vacation solo often B.W.a.K. It’s sublime, when you go somewhere new alone you are forced to make new friends! One of my vacations was Hawaii back in 1995, although I just hung out on Oahu. I didn’t even rent a car, but ended up all over the island with other tourists and even locals. Bought a surfboard, but never managed to get up on it. (I think the size of the ratio of [time spent chasing girls]/[time spent in ocean] may have had something to do with my lack of surfing prowess. Really I think my main goal in learning the latter was to improve the chances of success in the former anyway!) I also once went to Guam for 2 weeks, although I had a friend who lived there at the time. Tropical islands somehow seem surreal, giving the feeling “Like life can’t be this easy”. But damn it was fun. Get a shave ice and chill!

I’m partial to spicy poke with avocado myself.

Loco moco is probably worth a spin for the novelty if nothing else. Prepare to be very full.

Spam musubi doesn’t just sound gross, it is gross.

My favorite though is a really solid kalua pork sandwich on hawaiian sweet bread.

If you hit Oahu at all, let me know, and I will give you some tips on where to go.

Poke is awesome, as are most of the fruits you’ve mentioned!

If you’re feeling adventurous, try a Spam musubi. It sounds gross and tastes fantastic.

You need to learn a few more Hawaiian words — start with loco moco. True, not actually Hawaiian but has a unique meaning there. Best plate lunch ever. Try it and you’ll learn ono (delicious). You are making me miss my old home.
